Start your morning with the healthy benefits of enzyme fermented coffee.
Less Caffeine Fermentation reduces the caffeine content from 85-90% This makes fermented coffee a great option for people who enjoy drinking coffee but want to lower caffeine intake in their diet or enjoy coffee in the evenings without disturbing sleep. The lower caffeine also makes it suitable for pregnant women, seniors, or people with anxiety.
Friendlier on Digestion Tannins and acid in coffee trigger stomach discomfort, especially in those with digestive conditions. Fermentation makes coffee easier to digest and absorb by breaking down tannins and other compounds.
Longer Shelf Life Fermentation leads to less rancidity, thereby extending the preservation period of roasted coffee beans up to two years. A longer preservation period allows the taste to become even richer.
Less Bitterness - Enjoy with less sugar Fermentation decreases the intensely bitter taste of regular coffee. Less cream and sugar are needed for an ideal cup of coffee, making it easier for you to cut back on calories.
Frequently Asked Questions
How does enzyme fermentation work?
The green coffee beans are first washed in a 50 enzyme complex. This is for a short time only, just enough for the enzyme to attach to the beans.
The green beans are then put into an incubator to ferment - at a fixed temperature. They are mixed evenly as needed. The slow mixing makes the fermentation process more efficient.
Once fermentation is complete, the green beans are exported from South Korea to the USA. And roasted by Dayes Coffee to bring out its best flavor.
The coffee bag comes without being vacuum packed, is that by mistake or on purpose?
Because DAYES coffee is roasted fresh. The packaging is not vacuum-packed to allow the beans to degas and expel carbon dioxide. Degassing helps develop the best taste for the coffee. The special valve on the packaging ensures that carbon dioxide is expelled and oxygen does not enter.
Vacuum-packed beans are typically not freshly roasted and already degassed before packaging.
Do you offer dark roast?
DAYES Coffee Roasters only offers medium-dark coffee. DAYES Coffee is founded by a PhD cancer researcher who strongly believes in creating healthy coffee. Typically, to create a dark roast, the coffee beans have to be burnt to a certain level that may cause harm to our body, therefore, Dayes Coffee has a philosophy to only roast coffee that is good for your gut. For a bolder cup of Dayes Coffee, try brewing with a higher coffee-to-water brewing ratio.
Why is the DAYES coffee I brewed mild?
Try adjusting your coffee to water ratio DAYES Enzyme Fermented coffee is less bitter than regular coffee. It is also roasted for optimal health (full city medium-dark) to prevent harmful substances that can be found in dark roasted coffee.
Why is your coffee so expensive?
Enzyme Fermented coffee brings special health benefits not found in other coffees. The process of choosing high quality beans and the extra labor involved in the enzyme fermentation reflects the value of the enzyme coffee.
We believe your health is well worth the investment. If you are looking to limit your caffeine intake but still love the taste of great coffee, DAYES enzyme fermented coffee is a great choice. If you have GI issues and a sensitive stomach, DAYES enzyme fermented coffee’s low-acid profile minimizes your discomfort.
I am concerned about mold in the coffee beans. Is this an issue with Dayes Coffee?
Dayes Coffee sources only Grade 1 quality beans. This means the beans are carefully screened for mold and imperfections, thereby minimizing the risk of mold toxins being introduced into the roasted coffee. In comparison, coffee roasted with Grade 2 beans have a higher risk for mold as the quality control standard is much lower.
Because Dayes Coffee is roasted in small batches. Visual inspection of the beans and quality control during roasting ensures that bad quality beans are discarded.
