How does enzyme fermentation work?
The green coffee beans are first washed in a 50 enzyme complex. This is for a short time only, just enough for the enzyme to attach to the beans.
The green beans are then put into an incubator to ferment - at a fixed temperature. They are mixed evenly as needed. The slow mixing makes the fermentation process more efficient.
Once fermentation is complete, the green beans are exported from South Korea to the USA. And roasted by Dayes Coffee to bring out its best flavor.
The coffee bag comes without being vacuum packed, is that by mistake or on purpose?
Because DAYES coffee is roasted fresh. The packaging is not vacuum-packed to allow the beans to degas and expel carbon dioxide. Degassing helps develop the best taste for the coffee. The special valve on the packaging ensures that carbon dioxide is expelled and oxygen does not enter.
Vacuum-packed beans are typically not freshly roasted and already degassed before packaging.
Do you offer dark roast?
DAYES Coffee Roasters only offers medium-dark coffee. DAYES Coffee is founded by a PhD cancer researcher who strongly believes in creating healthy coffee. Typically, to create a dark roast, the coffee beans have to be burnt to a certain level that may cause harm to our body, therefore, Dayes Coffee has a philosophy to only roast coffee that is good for your gut. For a bolder cup of Dayes Coffee, try brewing with a higher coffee-to-water brewing ratio.
Why is the DAYES coffee I brewed mild?
Try adjusting your coffee to water ratio DAYES Enzyme Fermented coffee is less bitter than regular coffee. It is also roasted for optimal health (full city medium-dark) to prevent harmful substances that can be found in dark roasted coffee.

I am concerned about mold in the coffee beans. Is this an issue with Dayes Coffee?
Dayes Coffee sources only Grade 1 quality beans. This means the beans are carefully screened for mold and imperfections, thereby minimizing the risk of mold toxins being introduced into the roasted coffee. In comparison, coffee roasted with Grade 2 beans have a higher risk for mold as the quality control standard is much lower.
Because Dayes Coffee is roasted in small batches. Visual inspection of the beans and quality control during roasting ensures that bad quality beans are discarded.
